Does Cooking Destroy Olive Oil? Separating Fact from Fiction

One of the most persistent myths surrounding olive oil is that it should only be used cold and that heating it destroys its quality or makes it unsuitable for cooking. In reality, high-quality extra virgin olive oil (EVOO) is remarkably stable and well suited to many everyday cooking methods.  Extra virgin olive oil also naturally contains polyphenols and other antioxidants. These compounds help protect the oil against oxidative damage and contribute to its characteristic flavour, aroma and nutritional qualities. Vitamin E provides additional antioxidant protection. While very high or prolonged heat can reduce some sensitive nutrients and aromas, EVOO remains suitable for common cooking methods such as sautéing, roasting, baking and stir-frying.
